See this shout out to El Rio: “At the bars-with-bands level, El Rio seems to also be upping its epicurean pop-ups. Along with the now-frequent Rocky’s Fry Bread (side note: Rocky is also in the band Sweat Lodge, which often plays El Rio) stand, there’s Piadina homemade Italian flat bread, and the occasional Mugsy pop-up wine bar, which offers bubbly and red wine varieties.”

La Piada Randagia serves fresh, homemade Piadina - flatbread from Italy - with a variety of cheeses, but usually stracchino or mozzarella and either salami or prosciutto and some kind of greens (arugula if it is available). It is a traditional food from Italy.

The people who make it and serve it at El Rio are Italians, mostly from the Bologna area.

Tattini, a head bartender at El Rio for many years, started experimenting with various flours and recipes to recreate the flavors she remembers. The Piadina served on Fridays (usually every other) is the accumulation of many experiments.

As someone who tasted her early work, I can tell you that she also makes a damn good tortilla. 

Through trial and error came the Piadina that’s served now. Tattini had the idea that somehow she would naturally know how to make the dough from all those years of being in a kitchen and being Italian. Now she knows better.

Do yourself a favor and come a little hungry on a Friday when the Italians are serving the Piadina.
